Homemade Tomato Sauce

This Tomato sauce is easy to make recipe. It can be used to make Pasta, Pizza, Lasagna and so much more. The tomatoes are cooked with spices and simmer to become nice and thick sauce.


Step 1: Ingredients


1) Crushed Tomato - 28 oz
2) Tomato Paste - 2 Tsp
3) Chopped Garlic - 2 Tsp
4) Chopped Onion - 1 medium
5) Oregano - 1 Tsp
6) Thyme - 1 Tsp
7) Basil - 1 Tsp
8) Pepper as per taste
9) Salt as per taste
10) Olive oil - 2 Tbsp


Step 2: Making the Pizza Sauce

Pizza Sauce

1) Place a heavy bottom pan on medium heat and add olive oil.
2) Once the oil is hot, add the chopped garlic and saute for a minute.
3) Then add the chopped onion and saute till it becomes translucent.
4) Add oregano, basil, thyme, pepper, salt and tomato paste and saute.
5) Then add the crushed tomato and about a cup of water.
6) Once the mixture comes to boil reduce the heat to low and allow it simmer for about an hour.
The Tomato Sauce is ready now !!!. This sauce can be used for making Pasta and Pizza. Can be frozen and used when necessary.

Cumin Rice (Jeera Rice)

Jeera(cumin) rice is a simple boiled rice flavored with cumin seeds, bay leaf, cardamon and cloves. It is easy to make and is an excellent accompaniment with all dishes. 



Step 1: Ingredients:


1) Cooked Rice - 1 Cup
2) Cumin Seeds - 1 Tsp
3) Bay leaf - 1
4) Cardamom - 2
5) Cloves - 4
6) Chopped Cilantro - few strands

Step 2: Making the Jeera Rice




1) Heat a pan on medium heat and add butter.
2) Once the butter melts add bay leaf, cardamom, cloves and cumin seeds.
3) Once the Cumin seeds crackle, switch off the stove and add the cooked rice.
4) Saute well and garnish with chopped cilantro.

Note:
* Sliced Onions and Cashew nuts can also be added.

Strawberry Lassi (Strawberry Yogurt Drink)

Strawberry Lassi

Lassi is a cooling and refreshing drink to have in the summers. It is a yogurt based drink and very popular in the northern parts of India. Lassis are either sweet or savory.
Strawberry Lassi is a sweet Lassi which is made by churning yogurt along with sugar, strawberry syrup and strawberries.

Note:
1) Make sure the yogurt is not sour.(very important)
2) Water can be added to dilute the Lassi.(I have not added water as I wanted it to be thick)
3) Try to use hand mixer/whisk to churn the lassi as it provides a unique taste and frothy texture when compared to a blender.


Step 1: Ingredients


Strawberry Lassi

1) Yogurt / Curd - 1/2 Cup
2) Sugar - 2 Tbsp (as per taste)
3) Chopped Strawberry - 1/4 Cup (frozen or fresh)
4) Strawberry syrup - 1 Tsp
5) Ice cubes

Step 2: Churning the Strawberry Lassi


Strawberry Lassi

1) Grind the chopped strawberry with 2 tsp of yogurt into a smooth paste in a blender.
2) In a bowl, add the strawberry paste, remaining yogurt, sugar, strawberry syrup and beat it using a hand mixer.
3) Then add ice cubes and beat it till turns frothy.
4) Pour it in a glass and garnish with some chopped strawberry on top and serve.
Strawberry Lassi (Strawberry Yogurt Drink) is Ready !!!!

Indian Filter Coffee

Indian filter coffee is a coffee drink made by mixing frothed and boiled milk with the decoction obtained by brewing finely ground coffee powder in a traditional Indian filter.South India is very famous for it aromatic filter coffee. Step 1: Ingredients

1) Milk
2) Filter Coffee Powder -  2 to 3 Tsp (not the instant one)
3) Sugar as per taste
4) Water 
5) Traditional Coffee Filter

Step 2: Making the Decoction

1) In the top part of the traditional filter(perforated one), add 2 to 3 Tsp of the filter coffee powder.
2) After adding the filter coffee powder, place the pierced pressing disc on the top of it.
3) Add the boiling water on top of it, close the lid and allow it to sit undisturbed for 8 to 10 min or to slowly drip the brewed coffee into the bottom.
Note:
* For strong decoction, add extra filter coffee powder for brewing.
* The decoction can be stored in a air tight container in refrigerator for future use.


Step 3: Making the Indian Filter Coffee

1) Add 1 to 2 Tbsp of the brewed coffee to a cup or tumbler.
2) To it add hot milk, sugar and mix well and serve it in a tumbler and dabarah (used to cool the coffee)
Indian Filter Coffee is now ready to be enjoyed !!!!

Whole Wheat Flat Bread Pizza Without Oven (Chapathi Pizza)

Whole Wheat Flat Bread Pizza is easy and fast to make recipe. Its made like whole wheat flat bread (Chapathi/roti) and then assembled like a pizza. It is cooked on the stove top without using the oven. Resting time or prior preparations is not required for this recipe.

Preparation time :
Pizza Dough : 3-4 minutes.
Preparing the veggies : 3- 4 minutes
Assembling and cooking the pizza: 5 to 10 minutes
Total time : 15 to 20 min


Step 1: Ingredients


Whole Wheat Pizza Dough
1) Whole Wheat flour - 1 Cup
2) Milk - 2 Tbsp
3) Water - 2 Tbsp (In the picture water and milk is mixed)
4) Olive oil - 1 Tbsp
5) Salt - 1 Tsp
Pizza
1) Whole Wheat Pizza Dough
2) Pizza Sauce (Homemade or store bought)
3) Chopped Green Bell Pepper - 1/ 4 Cup
4) Chopped Red Bell Pepper - 1/4 Cup
5) Chopped Onion - 1/4 Cup
6) Sliced Olives - 1/4 Cup
7) Grated Cheese - as per taste

Step 2: Making the Pizza Dough (No Yeast )

1) Add whole wheat flour, salt, olive oil and mix together.
2) Add milk and water little by little and keep kneading it into a dough. (Mixed water and milk before adding)
3) The dough should neither be sticky nor be very hard. When pressed with a finger, the dough should have the finger impression.


Step 3: Making the Pizza


1) Take a small portion of the dough, roll it into a ball and dust it with flour on both sides. Then roll it into a flat bread
2) Place a pan on medium heat, put the rolled flat bread/chapathi on the pan/tava.
3) Cook the flat bread on both sides by flipping over.It takes about 1 to 2 min to cook on both sides.(light brown spots indicate its cooked)
4) Switch off the heat or remove the pan from the heat and assemble the pizza. Spread the pizza sauce, then the vegetables and top it with cheese.
5) Switch on the heat to medium after assembling the pizza and cover it and cook.
Whole Wheat Flat Bread Pizza without Oven is now ready to be served.

Broccoli Soup

Broccoli Soup is a healthy, tasty and easy to make recipe. This creamy soup is prepared with broccoli, onions, almonds cooked in milk and flavored with salt and pepper.

Step 1: Ingredients for Broccoli Soup

Broccoli Soup : Ingredients

1) Broccoli florets - 1 Cup 
2) Chopped Onion - 1/4 Cup
3) Garlic Pods - 1 to 2
4) Almond - 8 to 10 (soaked and skin removed)
5) Pepper - as per taste
6) Salt - as per taste 


Step 2: Cooking the Broccoli Soup

Broccoli Soup : Procedure
1) In a pan/vessel, add the broccoli florets, almonds, garlic, onions, milk and cook till broccoli is soft.
2) Allow it to cool down and blend it to very smooth consistency in a blender.
3) After blending transfer it back to the same vessel, season it with salt and pepper and allow it to boil.
4) Broccoli Soup is ready to be served. Enjoy !!!

Chicken Curry in Crock pot (One pot Dish)

Chicken curry is a common delicacy in south India. This curry is made by cooking chicken in onion, tomato and yogurt base using a variety of spices. Chicken curry is served with hot rice or roti /flat bread. This instructable will show how chicken curry is made using crock pot.



Step 1: Ingredients



1) Chicken - 1/2 Kg (I used skinless chicken with bone)
2) Finely Chopped Onion - 1 Large
3) Finely Chopped Tomato - 1 Large
4) Crushed Ginger and Garlic - 3 pods garlic & 1" ginger
5) Yogurt - 1/4 Cup
6) Chopped cilantro - few strands
7) Chili Powder - 1 Tsp
8) Coriander and cumin powder - 1 Tsp
9) Garam Masala - 1 Tsp
10) turmeric - 1/4 Tsp
11) Curry powder - 1 Tsp
12) salt as per taste
13) Oil - 1 Tbsp
14) Cinnamon stick - small piece
15) Cloves - 3 to 4

Step 2: Loading the Crock pot

1) In the Crock pot, add the chicken, finely chopped onions, finely chopped tomato and mix
2) Then add crushed ginger garlic, chili powder, coriander and cumin powder, turmeric powder, garam masala, curry powder, cinnamon stick, cloves, yogurt, cilantro, salt, oil and mix well.
3) The chicken will ooze out water when cooking so water is not needed to be added. (If preferred 3 to 4 Tbsp can be added)
4) Close and cook in the crock pot for 8 hours on low or till the chicken is cooked well and the oil starts to separate.
Chicken Curry is ready to be served with hot rice or flat bread.
Note :
1) Chop the onions and the tomato finely. A food processor can be used to finely chop. (do not make it to a puree)
2) Separate marination is not required for the chicken as it cooks very slowly.
3) If desired, the onions can be sauteed in a separate pan for few minutes before adding into the crock pot.
